Matthew Borowski is a key figure in New Jersey’s hospitality scene, known for his innovative approach to the industry. As the author of The Death of Hospitality, he advocates for breaking away from traditional norms in the hospitality world to achieve unparalleled success. His flagship establishment, 618 Restaurant in Freehold, has garnered significant accolades, including recognition as one of OpenTable’s Top 100 Most Romantic Restaurants in America and being ranked in the Top 1% of Restaurants in the World.

In 2025, Matthew expanded his influence in the culinary world by launching Mezcal, a Modern Mexican Steakhouse in Old Bridge that quickly became one of the hottest new dining destinations in New Jersey. Additionally, he has partnered with and become a franchising operator for the beloved local brand, Jersey Freeze, further cementing his impact on the state’s restaurant scene.
